I’m really sorry I haven’t posted in a while, I’ve been tied down with coursework deadlines and haven’t had much time to post anything:(
Today is super special though because it’s PANCAKE DAY! I normally make pancakes with my Dad for dinner but I’ve had to find my own gluten free recipe because I’ve been having problems with my diet. If you’ve read my very first post then you’ll know that I’ve been experiencing weird symptoms from eating gluten (bloating, nausea, tiredness) We think the main cause of it was stress and I’m slowly welcoming gluten foods into my diet but I can’t over do it. I seem to be ok with my Mums homemade bread but foods like pasta and pizza bases are a no go.
I thought I’d share the recipe and how my pancakes turned out (mainly because I love taking photos of anything with my new camera)

I honestly couldn’t taste any difference and I didn’t miss the old pancake batter mix at all!! xD
